There is nothing like soup to warm you on a cold day (hello 10 degrees this morning). I thought I would share a winter staple with you; my vegan lentil soup. It’s packed with protein and will fill you up! You can make a huge batch if you like and keep some handy in the fridge (just double this recipe).
Serves 4 -6
What you’ll need:
2 cups lentils, rinsed
9 cups water
1 cup chopped onion 2 cups chopped celery 2 cups chopped carrots
5 tablespoons snipped cilantro
4 cloves garlic, minced 2 ½ teaspoons salt ½ teaspoon dried oregano flakes
1 tablespoon olive oil
How to make it:
In a large stock pot, place lentils, water and all other ingredients except for the carrots. Cover and simmer for 1 hour, then add carrots. Simmer, covered, for another hour, and then serve with a sprig of cilantro (or parsley if you prefer ).
