banana bread with blueberries
I thought it would be nice to kick off the week with another recipe.
My recipe for banana blueberry bread is really easy, and so good. I’ve made it twice in the last few weeks, with all the blueberries in season the last few weeks it is now a go-to recipe for me. As I mentioned in last weeks post about peach blueberry pie, I love blueberries and am always looking for new ways to bake with them. I used a recipe for banana bread that a friend passed along to me (from her grandmother) about 15 years ago, and I adapted it to include the blueberries. It is perfect for house guests, or as a housewarming weekend gift.The loaf should last for a few breakfasts for 4 people. Here you go:
Banana Blueberry Bread
3 large ripe bananas
1 cup white sugar
1 teaspoon salt
2 tablespoons buttermilk (or regular milk if you prefer).
1/2 cup butter
2 cups of flour
1 teaspoon baking soda.
1/2 cup blueberries
What to do:
Preheat oven to 350 degrees
Grease a loaf pan and set aside.
Mix all dry ingredients together-
Mash bananas, and creamed butter (let it sit out for a bit and it will soften on it’s own). Avoid using cold butter right from fridge. Add the eggs, milk and mix together. Gently fold in the blueberries. Pour into loaf pan.
Bake for an hour, or until toothpick comes out clean.
